Mexican stew at Hoja Santa: “Mole de olla”

During these winter months chef Paco Méndez Will offer a series of special lunches at our restaurant Hoja Santa in Barcelona. We will make a version of a stew inspired in the traditional Mexican “Mole de olla”.

We are taking the idea of the event #elcocidodetodos we did together with the great chef Juanjo López of La cocina de Frente in Madrid. We liked the result so much, that we decided to bring it to you for a limited time at our restaurant.

El Mole de olla is traditionally a main dish with seasonal vegetables that is normally eaten at lunch time during the whole year in Mexico. It has many variations, especially in the center of the country and is served in vuelcos or steps just like the typical Spanish stews.

Our version of Mexican stew will have 5 vuelcos, and one dessert at a fixed Price of 55€ per person without drinks. We will also offer the option to add seasonal black truffle.
